Bengali Aloo Posto Recipe: Simple Comfort Food Done Right
Bengali cooking has plenty of elaborate dishes, but some of its most loved recipes are surprisingly simple. Aloo Posto is a perfect example.
Potatoes, posto or poppy seeds, green chillies and mustard oil come together to make a dish that generations of Bengali households have served with plain rice and dal. There is very little to hide behind, so the balance of texture, aroma and seasoning matters.
Ingredients
- 3 medium potatoes
- 4 tablespoons poppy seeds (posto)
- 2 to 3 green chillies
- 1/2 teaspoon nigella seeds (kalonji)
- 2 tablespoons mustard oil
- Salt to taste
- Water as required
Prepare the Posto Paste
Soak the poppy seeds for about 20 to 30 minutes. Drain and grind them with a little water and one green chilli until you have a smooth, thick paste. Peel the potatoes and cut them into medium cubes so they cook evenly.
How to Cook Aloo Posto
Heat mustard oil in a kadai. Add the nigella seeds and allow them to release their aroma for a few seconds. Add the potatoes and sauté briefly, coating them well in the oil.
Add the poppy-seed paste and mix gently. Season with salt, then add a small amount of water. Cover and cook on a moderate flame until the potatoes are tender. Stir occasionally, adding only a little more water if required.
When the potatoes are cooked, remove the lid and let any excess moisture reduce. The posto should cling to the potato rather than form a thin gravy. Add slit green chillies toward the end and serve hot with steamed rice and dal. If you prefer a more rustic texture, keep the posto paste slightly coarse; for a creamier finish, grind it more smoothly. Both versions work beautifully as long as the paste remains thick and aromatic.
The Mustard-Oil Note That Makes It Familiar
Mustard oil does more than cook the potatoes. Its distinctive aroma works with the nuttiness of poppy seeds and the heat of green chillies to create the flavour profile associated with homestyle Aloo Posto.
Brambhi Cold-Pressed Mustard Oil brings that familiar mustard character to everyday Bengali recipes without asking the dish to become complicated. A bowl of rice, dal and freshly cooked Aloo Posto is often all it takes to turn an ordinary lunch into comfort food.
